The expansion packs can easily be applied to the Mac version as well. The only things the mac version truly lacks is support for many of the higher-end video settings. Environmental shadows being the most noticeable feature missing on our end.

How does the Platinum Edition installation work out? Is it all in one or broken up into one expansion pack by one?

What about other settings missing? Does it have to do with direct x 9 though?

Well, either installation would yield files that could be used for NWN2 for Mac. I was not even aware that a platinum edition of NWN2 was out, I knew that one for NWN exists. Basically you would transfer all files labeled "x1, x2" and the dialog.tlk. I think I may have posted details on this on these forums awhile back, if anyone is interested I could post some step-by-step instructions for manually transferring things from a PC-side installation.
Other settings missing would be, anti-aliasing, point-light-shadows, and maybe some other things. I have done some tinkering with the NWN2 app trying to re-enable such things, I am unsure if the code was actually removed or if things were simply disabled on the mac side. My guess would be that the issue is related to how NWN2 had issues with ATI cards and shadows flickering back in the day. Since then said issues have been resolved I think, either way I think us mac users deserve a fully functional app. So far I did manage to reenable the UI for said options, though selecting them results in things being reset upon leaving the options menu.

I would think this also means they can no longer have new copies manufactured to be available for sale on the physical market as well.
