Go to /Users/YOU/Library/Application Support/Crossover/Bottles/BOTTLEWITHHEROES/ and open User.reg in TextEdit and add the following at the end:
[Software\\Wine\\X11 Driver] 1241142526
"Decorated"="N"
"Managed"="N"
"Desktop"="1024x768"
Then press F4 in game to go to Windowed mode.

First of all thanks for your help, edited User.reg placing it commented at the end of the file and save, but start the game and still is in full screen giving the F4
I followed your steps only thing not in my library folder crossover, but the 3 heroes, and there is where that file user.reg.
User/Library/AplicationSuport/Heroes III/Bottles/user.reg.
¿ It may be why ?

Okay since you are using a wrapper but not Crossover directly the Bottle is not in the Crossover folder.
Try one thing, remove ~/Library/AplicationSuport/Heroes III/
Then right click on the application and choose Show package content and go to Contents/SharedSupport/cxchromium/support/chromium/ and edit that user.reg
Then try launching the game and pressing F4.

I have not played Heroes 3 with Crossover nor via wrapper but I would assume that since the virtual desktop effect in Crossover's fork of Wine is pretty recent it has not been developed sufficiently to get it going perfectly. Thankfully Heroes is a turn based game so that shouldn't be too much of a problem.
