I can't download anything in iTunes. I'm just going to ignore it for a couple days...Apple definitely needs that new datacenter.

True.
I was able to get the new MLB At Bat update. I must say, the new video offering is fantastic. Live streaming of two games a day. Perfect for a man with an iPod touch on the go.

is there a list of stuff that it adds that is actually useful to iTouch users?

Spotlight is useful when you have lots of apps, you could download movies, TV shows and audio books directly to your iTouch, copy & paste is always useful
Apart from that I have to say that I'm pretty sure that we will see OS 3.1 (or at least 3.0.1) very soon: there are quite a few (small) bugs and glitches.

it unlocks bluetooth on the iTouch, which is pretty big i guess. Also there's official gamepad support coming from apple

Internet tethering is a very nice feature of the new update. Browsing with 3G is fast enough that loading times on standard web pages only take a few seconds. I am currently driving down a highway in the middle of nowhere and posting from the MBP.

DONT TETHER AND DRIVE!
are you using USB or BT tethering?
The main thing holding back the iPhone with web browsing is basically the CPU, theres no two ways about it. I dont think we'll see it or any other phone able to compete directly with a computer for at least 2 to 3 years. Basically when Apple next switch the CPU architecture for something faster (3GSS?).
Of course, more RAM wouldn't go amiss.

calm down, I'm the passenger
I'm using USB to conserve battery life on both the MBP and iPhone by keeping bluetooth turned off. The speeds are noticeably better on the MBP while browsing then on the iPhone 3G
