The Movies sounds very, VERY similar, although it is entirely graphical. Can't help with your other game.
I'm actually TOO good at both TMFPPG and Fable:TLC.
I sleep in a BBEdit T-shirt, but I'm a TextMate user.

The one I'm thinking of wasn't text-only in a DOS text adventure sense. It had a GUI, but was reminiscent of some sort of office-type program.

I remember this game so well because I actually made a Duke Nukem movie with this game and actually ended up laughing so much, seeing it totally tank at the box office. Sadly, I don't remember what this game was called - it's not listed in MacUpdate or VersionTracker's OS 9/Classic indices.

Speaking of The Movies, is the expansion out yet? Feral's site says it's coming, but Amazon has a few people selling the Mac expansion. The fact that Amazon themselves doesn't have it in stock leads me to believe those people aren't really selling the Mac version :-/.
