as for getting it to use 512mb, I would check out the tweak guide over on macologist (search the forums). this would let you set other things to optimise the performance beyond just the VRAM settings (which I dont think do too much anyway)...
Main difference I heard is high uses texture compression, ultra doesn't.
A thing that I don't like about some tweak guides is they mainly have you shut off everything even if your hardware probably could handle some if not most of those things.
