Actually, all Blizzard demos are brilliant. I still have a copy of the Warcraft I demo on my computer.
Recently, though, I'd have to go with Burning Monkey Solitaire. I just love how the monkeys pester and guilt you into buying the game.

Warcraft 3 is also good for a quick 1 on 1 skirmish.
Multiplayer demos are cool, because unlike single player demos, they rarely play the same way twice.

Since you can just run around doing whatever you want, the demo can stay fresh for quite some time.

In no particular order:
1) Civilization 2.
2) Myth 1.
3) Jedi Knight 2. (The demo level is not in the game and does not require a CD, so the demo is still on my Mac)
4) Call of duty.

Another good demo was Fallout since it actually was a completely different story in the demo compared to the full game. It made the demo fun even when having the full game if you just wanted to go mad.
Oh and yeah, the JKII demo. Really sweet one. Thanks for reminding me Chris.

On Mac OS X, the Warcraft 3 demo was really cool, because you got to play a completely differenct story line. I had already beat the game, and had received the demo on a CD from a movie theater.

The RtCW demo was super-sweet as well, and the level set in the crypts was actually quite scary – the first time those zombie monster things appeared I almost jumped out of my seat!
Other than that, Diablo 1's demo was awesome; I also thoroughly enjoyed the Myth and Oni demos.
And you can't forget the two demos that made buying the full version unnecessary: The original Worms game demo and the Unreal Tournament demo – both offering free unlimited multiplayer!

Call of Duty had the best single player mission in the whole game for their demo which was just kickass.
Starcraft gave you a nice taste of the game, and I remember playing it on and on and on.
I may vote for BF1942 if this MP demo runs well on my iMac. The SP demo was just horrendous. I'm hoping MP is less demanding, but I doubt that.
