"As of today, both Divinity: Original Sin 2 and Baldur’s Gate 3 run on the new range of Macs, but they currently run via Rosetta 2, which doesn’t really make use of the exciting features M1 enables."
So Baldurs Gate 3 was actually running using Rosetta at the event, which I found surprising. I assumed it being native code, since they were showcasing it (Did I miss it being mentioned anywhere in this thread?). This also means it will likely run even better than what they showcased!

That's unless crossover implements something particular, like a DX11 to Metal direct conversion, but I don't think they do. AFAIK, Wine only does DirectX to openGL (conversion to Metal calls is done by macOS on the M1, as the M1 has no openGL drivers).
