I think they are starting to run out of Mac games at Epic. Or they see close to zero sales from Mac users.
You're right about many games having Mac ports on Steam having only Win ports on Epic. I think that's developers' decision. If they already don't sell enough Mac ports they don't release it on Epic. Next week's game Europe Universalis IV is for Win/Mac though.

I swear that I have seen some games listed on Epic as having the Mac version available, but then it disappeared at some point. I was about to say that I think they did that with Troy, but now it’s back again? Anyway, IndieGala Freebies also totally dropped Mac versions. The first few that I was aware of included them, but they were often broken, so I guess they just gave up.

I really am going to have to update from Mojave at some point. Maybe set up a Mojave partition?

Using APFS for your file system, creating a bootable Mojave container is cheap. You can create a Mojave container that only uses exactly as much space as the files in it. It shares all its free space with your main OS.

The Porting Kit has premade wrappers for both of these games that work perfectly in Big Sur.

The original Ghost Recon and DLCs for GR Wildlands and GR Breakpoint are currently free from Ubisoft until October 11. Windows only, obviously.

Wildlands - Fallen Ghosts is also free on Steam but as usual you can't claim it if you don't have Wildlands.

I wonder if Stubbs is actually 'fixed' to run correctly on new windows. Last time I tried it (many decades ago), it was broken beyond belief.

As I understand it, that was the point of the recent re-release (as well as to port it to consoles). Got it from a Humble a few months ago but I have yet to give it a go. Loved the Mac version as a kid.

Will have to give it another run. I recall it being really fun (when it worked, or when I got it to half-work with hacks/tricks).
