Hi,
I am looking at getting an imac for the misses for Christmas and as she is sim and apple obsessed I'm looking at the imac 27" 3.2GHz quad-core Intel Core i5 processor
Turbo Boost up to 3.6GHz
8GB (two 4GB) memory, configurable up to 32GB
1TB hard drive1
AMD Radeon R9 M380 with 2GB video memory
Retina 5K 5120x2880 P3 display

I can't vouch for The Sims 4, since I have never tried that and don't know how well the Mac version runs (you'd definitely meet the recommended specs, though), but 2 and 3 should run smooth as silk on that machine.

Should be good to go, although I strongly recommend you upgrade the hard drive to the 1 TB fusion drive option. The stock hard drive will make the machine seem very slow and unresponsive.
PS: that's a sweet christmas gift. I hope my wife has a 5K iMac under the tree for me

And I will strongly recommend you upgrade to the 2TB Fusion Drive. The stock hard drive as SS says above, is extremely slow, so touch that except with a 10 foot pole. The 1TB Fusion Drive only have a 24GB SSD, while the 2TB Fusion Drive has a 128GB SSD, which is a huge difference.

Seconded excellent advice. When reading the specs I also instantly thought, Fusion drive. You won't regret and I am sure the misses will be pleased with you.
