I'm trying to decide between keeping my G5 around after I get an Intel Mac or possibly getting a OS 9/OS X booting older Mac as I still have some OS 9 games I'd like to finish one day!

I also tested Star Wars - Galactic Battlegrounds earlier, and it works perfectly. (No surprise, since it's basically AoE II with different graphics.)
Other things to could add, although they are no games on their own behalf:
Power64 4.9.3 – palpable on the edge, but as long as no other programs run in the background smooth. Just forget about listening to iTunes while playing some C64 game...
MacMAME (0.103u2) – depends very much on the game you're running, but most run very smooth, except for some very demanding ones like Galaxy Force II. (BTW: I tried the universal version of SDLMAME for comparison and that shows that there is clearly a much better performance possible. Unluckily, SDLMAME is far from being convenient.)
GridWars 2.8 – some minor slowdowns when the screen gets very cluttered but well playable.

I'm considering purchasing Gooball after downloading and playing the demo. I noticed that according to the list, it doesn't run well under Rosetta. Has anyone had a different result with this game on Intel Mac?

Besides, Ambrosia itself says it's incompatible with Intel Macs. Unless you have an older Mac to play it on you're out of luck.
It's too bad that there isn't a UB for it. Works well enough on my PB, but it would look sooo much better on my iMac.

Edit: Okay. Checked it just now. You should have no problems changing settings once the actual game is running (not main menu). Mine only works well up to 1024x768 since the next higher one resolution has a funky placing on the screen and the last one isn't supported. *shrugs*

Wakeboarding Unleashed: not quite smooth but perfectly playable on maximum settings (15 to 20 fps estimated), very smooth when turning off the water reflections. (Note: the game shows some small issues, like too fast video playback and lack of support of higher resolutions than 800x600 (though higher resolutions appear in the menu), but these have nothing to do with Rosetta.)
One very preliminary result: Enemy Engaged runs, but shows some severe slowdowns when a lot of the landscape is visible. I have to look into a bit more how this affects the playability or if it possible to reduce the problems with the right settings.
